Kale Salad with Avocado and Tempeh
You need:
You do:
- a big load of fresh kale
- 1 lemon
- 1 avocado
- tempeh (fermented version of tofu)
- walnuts to taste
You do:
- cut kale in smaller pieces
- juice lemon and sprinkle over the cut kale
- mash avocado with some more lemon (add sea salt, pepper and chillie to taste)
- cut tempeh in chunks and heat coconut oil in a frying pan
- fry tempeh until golden-brown
- mix kale with mashed avocado
- add tempeh
- and some walnuts or sprinkle ground flaxseeds
Miso Cabbage with roasted Squash and Brussel Sprouts
You need:
You do:
- 1 leafy green cabbage (whichever you like)
- 1 butternut squash
- 4-5 cloves of garlic
- brussel sprouts as many as you like
- coconut oil
- 1 tablespoon miso paste
- 1/2 lemon
- hummus
- Sesame seeds
You do:
- preheat oven to 120 degrees
- peel and cut butternut squash and wash brussel sprouts
- peel garlic cloves
- marinate squash, brussel sprouts and garlic in coconut oil
- roast for 30 to 40 minutes
- cut the cabbage leaves in small pieces
- boil 100ml of water and add 1 tablespoon of miso to it
- massage cabbage with lemon juice and miso liquid
- add roasted veg
- add a dollop of hummus
- sprinkle with sesame seed
- season with black pepper

- 1 cup unsweetened almond milk
- 2 handful baby spinach
- 1 tbsp peanut butter
- 1 tbsp hemp protein
- 1 tsp spirulina
- 1 banana
- in fact - whatever you like as long as there is green stuff :)
You do:
- put in blender and give it a good swirl
- drink-eat (yes, chew your smoothies in order for you to absorb all the goodness!)
Rainbow Salad
You need:
You do:
- everything colourful you like!
- base of leafy greens (spinach, kale, lettuce)
- tomatoes, cucumber, sweet corn, olives, sprouts, avocado, beetroot
- beans of your liking (kidney beans, pinto beans, butter beans or chickpeas)
- mixed seeds (sunflower, pumpkin)
- fresh herbs, black pepper
- lemon and olive oil
You do:
- mash the avocado with the leafy green to make them soft
- chop all the other veggies
- mix and match
- season with fresh basil and black pepper
- add some olive oil and lemon juice
- sprinkle with mixed seeds
