Right, so I have been meaning to try Cauliflower Rice since forever and a day, but the shop had always run out of the main ingredient. Until today! Lucky me.. And you, because I'm about to share this recipe while I'm eating.
Basically you need cauliflower and then anything you fancy having with it. Today's example is:
Ground flax seeds and pumpkin seeds
Salt and pepper
If you have a food processor, amazing! Because my hand almost fell off from grating..
So you grate the cauliflower and heat coconut oil in a pan, fry the garlic and add the cauliflower and spices, let steam with a little bit of water on low heat for about 5 minutes. You can also eat it raw of course!
Meanwhile chop all the other veggies and at the end mix everything and enjoy!
This meal comes packed with sooooo many health benefits and it's super quick and easy.
Cauliflower being a cruciferous vegetable is very good for your liver and supports its detoxification process as is the turmeric and garlic. Cauliflower also contains plenty of anti-inflammatory compounds and is nutrient-rich, especially in vitamin C, K, B vitamins, potassium and manganese. The avocado and ground seeds provide a good dose of your essential fats. Overall this meal is also full of antioxidants.
